Brewbaker’s Chef Returns A Winner

FREDERICTON- New Brunswick’s capital has welcomed one of the World’s best chefs home.

Chef Ray Henry, Executive Chef at BrewBakers, recently returned to Fredericton after his Culinary Team Canada squad won four gold medals at the 2008 IKA Culinary Olympics in Erfurt, Germany.  The team placed fifth in the World in the medal standings. The competition wrapped up on Saturday.

"It is an honour to represent my country in this capacity,” says Chef Henry. “We represented Canada in so many ways-competitiveness, sportsmanship and great team work. Canada is so respected around the world for our high standard of cuisine; it was great to lay it on the line and show our stuff. 2012 is not so far off for Team Canada. If the phone rings again, I would jump at the opportunity."

A veteran member of Culinary Team Canada, Chef Henry’s career of over 20 years has won him many accolades such as Bermuda Chef of the Year and the mentor of Canada’s first Next Great Chef in 2006.

Chef Henry is also an active member of the community. His desire to help the Fredericton area and Atlantic Canada is reflected in his efforts to see the region shine as a premiere culinary destination and his work with the Atlantic Canadian Organic Regional Network to try and connect regional growers with chefs.

“BrewBakers is extremely excited that a professional of Chef Ray’s level has decided to call Fredericton home,” says Mr. Mark Haines-Lacey , President of Ross Ventures Ltd. “He has already had a positive effect on the food quality at BrewBakers. We know this because our customers are telling us so!”

Mr. Haines-Lacey adds that Chef Henry has won the respect of many within Ross Ventures Ltd. and the community.

“He is professional in everything he does. But that’s obvious – how can you win gold medals at the premier international culinary completion without being the best of the best?,” Mr. Haines-Lacey says. “He is also a wonderful teacher. All of his staff are so happy to be working with him. If I was a young chef looking to develop my career, Chef Ray would be my only choice of employer to apprentice with. He uses cutting edge techniques and has international connections. Best of all, he enjoys developing talent in others that are serious about their professional pursuit.”

A native of British Columbia, Chef Henry joined BrewBakers earlier this year.

and to encourage you to cast your ballot.

Slow to get the Thursday morning update in place thanks to a server
problem...but it's coming now and includes The Haunted Village @ Green
Village (which is also a fundraiser for the Fredericton Food Bank), more
on the job but not in the office, smiling faces, fall colours and more.

We're hurrying to finish up...so you'll have to check the calendar for
yourself this morning.

Sure is annoying when everything works fine and then suddenly....POOOFFFF!!!

Just the good ole magic of computers. On the plus side, the next update
is Friday. And that's the last day of the workweek before the long
Thanksgiving weekend.

justFRED-0-GRAM Fabulous Fall Colours

We can't help but be amazed at the spectacular colours - the trees,
the leaves on the lawns, the skies, and the people - at this time of
year. Even if that includes the occasional scary mask. It's October.
Enjoy it before the entire world around us turns white.

You may have noticed at temporary problem with our blogs. The
justFRED-O-Gram goes by email into the blogs - and something broke
the other day. It's fixed now, but we're still cleaning up.

We've also continuing to make improvements to the servers - this
time, it's an upgrade to our database server to make our photo albums
load more quickly. That's step one in a process that will see us
replace the current display pages - which we expect will make the
images load at least twice as quickly as they do now.

So...back to work...and don't forget to Say Cheese...or to get out
there an enjoy the beautiful colours while they last.

Pink everywhere on Sunday as hundreds gathered at Old Government House
to take part in the 10th annual CIBC Run for the cure, plus our visit
to the market, a craft fair and breakfast at the Corbett Avenue
Weslyan Church, an evening with Raven the Mentalist @ The Plex,
rockability drummer DJ Fontana - a member of Elvis Presley's band -
with the Rockin' '88s and more.

It's safe school week - so watch out for evacuation drills and other
school activities spilling into the city streets.

We've been up to our ears with a massive video project this week -
recording the complete proceedings of the Atlantic Health Care Symposium
about Electronic Health Records and putting more than six hours of video
online. Let's just say it's been a long, learning-intensive week.
